Eating nose to tail is not only critical for healthy people, but also healthy farms. Pigs produce an abundant amount of collagenous bones, feet and other funny bits. All of which cook down into an excellent broth and a lard that is low in omega-6. Often these parts are wasted in the U.S. so we encourage our customers to be bold and make broths and stocks with the variety of nose to tail components we offer.
